What does a freeze dryer do

Introduction
vacuum freeze dryer (referred to as a lyophilizer) is a device that utilizes the principle of sublimation to remove moisture from materials by directly converting solid ice into gas under low temperature and vacuum conditions, thereby achieving material drying. It can preserve the original shape, nutritional components, and biological activity of materials to the greatest extent, making it crucial in fields such as food, medicine, and biotechnology.

Working process of a freeze dryer:
1.Pretreatment: The material to be processed is pretreated, such as removing impurities, separating, concentrating, etc.
2.Freezing: The pretreated material is frozen into a solid state by spraying, soaking, or other methods.
3.Vacuum: The frozen material is placed into a vacuum chamber, and the air inside the chamber is evacuated by a pump to reduce the pressure to a certain level.
4.Heating: Under vacuum conditions, the frozen material is heated to raise its temperature, thereby causing the moisture within it to evaporate.
5.Collection: The evaporated moisture is collected by a condenser, while the dried material is also collected.
6.Packaging: The dried material is packaged to ensure its quality and shelf life.
The above is the working process of a freeze dryer. Through this process, liquid materials can be converted into dry materials, enabling long-term storage and transportation.
First, the material to be dried is placed into the freezing chamber, and its temperature is lowered below the freezing point by the refrigeration system, causing the moisture to solidify into ice. At this point, moisture on the surface of the material begins to form ice crystals, while the moisture inside gradually diffuses toward the surface.
Second, the material in the freezing chamber is transferred to the vacuum chamber. Under vacuum conditions, the pressure is reduced to an extremely low level, allowing the moisture to directly sublimate into water vapor without passing through the liquid phase. At this time, the moisture inside the material also gradually diffuses to the surface and then sublimates into water vapor.
Finally, the temperature inside the vacuum chamber is raised by the heating system, causing the water vapor to evaporate from the material, thereby achieving the purpose of drying. At this point, all the moisture inside the material has been evaporated, leaving only the dried material.
Advantages of freeze-drying technology
(Compared with conventional drying methods such as sun drying, oven drying, boiling drying, spray drying, and vacuum drying)
1.It dries at low temperatures, so proteins do not denature and microorganisms lose their biological activity.
2.Because drying occurs at low temperatures, the loss of volatile components, heat-labile nutrients, and aromatic compounds is very small.
3. During the low-temperature drying process, microbial growth and enzymatic activity are almost completely inhibited, thus best preserving the original characteristics of the material.
4.After drying, the volume and shape remain largely unchanged, and rehydration capacity is good.
5.Since drying is generally carried out under vacuum, the oxygen content is low, thereby protecting easily oxidized substances.
6.It can remove 95–99.9% of the moisture from the material, resulting in a long shelf life for the product.
Applications of freeze-drying technology:
1.Biological products and pharmaceuticals: e.g., preservation of antibiotics, antitoxins, diagnostic reagents, and vaccines.
2.Microorganisms and algae: e.g., long-term preservation of various bacteria, yeasts, enzymes, protozoa, microalgae, etc.
3.Biological specimens and tissues: e.g., preparation of various animal and plant specimens; drying and preservation of skin, corneas, bones, aortas, heart valves, and other marginal tissues for heterograft or homograft transplantation in animals.
4.Preparation of small tissue sections for light microscopy, scanning electron microscopy, and transmission electron microscopy.
5.Food drying: e.g., coffee, tea, meat, fish, eggs, seaweed, fruits, vegetables, seasonings, tofu, convenience foods, etc.
6.High-grade nutritional products and Chinese herbal medicines: e.g., royal jelly, honey, pollen, Chinese herbal preparations, etc.
